Lulu’s maple bacon


Good on just about everything! When I cater a party I like to serve this scrumptious bacon on a silver platter. It’s so unexpected and guests are always surprised and delighted. My husband Stevie sometimes likes to drop by the parties, when he does his first question is “Where’s the bacon?”

2/3 cup grade A or B maple syrup
2 teaspoons Dijon mustard
1/4 cup packed brown sugar
2 pounds beef, turkey, soy or pork bacon

Preheat the oven to 325 degrees.
In a small, heavy saucepan, mix together the syrup, mustard, and sugar and cook over low heat, stirring often, until the syrup thickens, about 10 minutes. If you’re pressed for time, mix together the syrup, mustard and sugar in a mixing bowl an brush it on the cooked bacon. Set aside.
Fry the bacon in a large pan over the medium-high heat, and if you have one, use a bacon weight to keep the bacon flat as it cooks.
When the bacon is cooked to your liking, drain it on a paper towel. Lay the flattened bacon on a jelly-roll pan and brush the glaze on both sides. Don’t place the bacon on paper towels, because it will stick to the paper, Use a baking pan or serving pan.
Bake for 10 to 12 minutes. Serve hot.
