Happy Birthday Ice Cream Layer Cake.

I love coming up with desserts that combine all of my current favorite things. This layer cake is the perfect combination of a few of my most popular recipes. It's easy and can be made with almost any ice cream, cookie, or dessert you happen to have on hand.

The Layers

Coconut Graham Crust
Denali MINT Moose Tracks Ice Cream
Caramel Chocolate Brownies
Salt & Straw Salted, Malted, Chocolate Chip Cookie Dough Ice Cream
Coconut Graham Crust
Malted Marscapone Whip Cream
Chopped up Rolos

Cover a spring form or round pan in saran wrap for easy removal. Next place a layer of Coconut Graham crust. Press down until firm. Layer 1/2 inch of Denali MINT Moose Tracks Ice cream evenly. Place Caramel Chocolate brownies next. Cover the brownies with Salt & Straw Salted, Malted, Chocolate Chip Cookie Dough Ice Cream. Dust with a layer of Coconut Graham Crust. Top with a generous portion of Malted Marscapone Whip Cream. Finish with a sprinkle of chopped up Rolos, and a final little dust of Graham.

Place in freezer until ready to serve. Serve Immediately. Enjoy.

*You can substitute any flavor Ice cream. These are just my two must haves at the moment. 

Coconut Graham Crust

  • 2 Cups Crushed Graham Crakers
  • 2 Cups Unsweetened Coconut
  • 1 Stick Melted Butter

Combine all ingredients.

Malted Mascarpone Whip Cream

  • 4 ounces mascarpone
  • 2 tablespoon Confectioner Sugar
  • 2 cups heavy cream
  • 3 tablespoons malted milk
  • 1 tablespoon vanilla bean paste

Place the mascarpone and confectioner sugar in a mixing bowl and slowly whisk until smooth. Then slowly add the cream and turn mixer up for about 4 minutes, until your whip cream is ready.
