Pumpkin Nut Crunch

  • 1cup pumpkin seeds (pepitas) 1/2 cup cashews
  • 1/2 cup pecans
  • 1/2 cup almonds
  • 1/2 cup pistachios
  • 1 tablespoon Canola oil
  • 2 tspns pumpkin pie spice
  • 2 tablespoons Maple syrup 1 cup dried cranberries
  • 1 cup julienned apricots fried sage crumbled
  • sea salt to your liking

Preheat oven 350

Put seeds and nuts in a bowl and mix with oil. Then spread on a cookie sheet Bake for 12 minutes at 350 Take out of oven and put back into bowl and toss the nuts with the maple syrup and pumpkin spice.

Put back in oven and roast for 15minutes Take out of oven. Put back in the bowl. Add cranberries,apricots and crumbled sage.
