I did this tablescape for House Beautiful at Table No 1. I fell in love with the tablecloth because it looks hand painted. It inspired me to start painting again! Be on the lookout for some custom Lulu Powers napkins.

SPINACH PESTO
2 CLOVES GARLIC
1 CUP CASHEWS
2 CUPS SPINACH
1/2 CUP MINT
1/2 CUP PARMESAN
1/4 CUP OLIVE OIL OR MORE
SALT AND PEPPER TO TASTE

Put the garlic cloves in CUISINART and pulse until fine. Add the cashews pulse until crumbly. Then add the spinach, Parmesan and oil and pulse until your desired consistency.
