National Pancake Day!

Happy National Pancake Day friends! In honor of the sweet day, I'm making brinner (breakfast for dinner) in the form of my Mini Blueberry Pancakes. Enjoy and share with me your favorite way to make flapjacks.   

Mini Blueberry Pancakes

1 cup all-purpose flour

1 tablespoon granulated sugar

2 tablespoons baking powder

1/4 teaspoon salt

1 beaten egg

1 cup milk

2 tablespoons cooking oil

basket of fresh blueberries

1 squeeze bottle


  1. In a mixing bowl stir together flour, sugar, baking powder and salt. In another mixing bowl combine egg, milk and cooking oil. Add to flour mixture all at once. Stir mixture just until blended, but still slightly lumpy. Add the blueberries.
  2. Pour batter into squeeze bottle.  Squeeze batter onto a hot, lightly greased griddle or heavy griddle skillet.  Cook until edges begin to brown and bubbles form on top.  Flip until golden brown.
