Anyday Tacos!
/I love having things in my fridge that I can make into a delightful and easy meal. I almost always have black beans and roasted red pepper tapenade ready to go. It’s a simple way to add flavor and color to any meal, especially tacos! Put a splash of cholulah on it, and you’re set.
Black Bean Spread
- black beans 15 oz can
- 2 cloves garlic
- 1 tsp chopped jalapeno
- 1 lime, juiced
- 1/4 cup pulled cilantro
- 1 tsp cumin
- 1/4 cup water
add all ingredients to cuisinart and pulse til combined.
Red Pepper Tapenade
- 10 small peppers, julienned
- 3 cloves garlic sliced
- 1/2 cup olive oil
- salt and pepper to taste
Combine ingredients and place on sheet pan with silpat, roast at 350 degrees F. for 20 min until some peppers have blackened color on them. Cool and store in a glass jar, great for tacos, crackers, crostinis, or salads.
Heat up a few tortillas on the flame of your stove, layer black beans, pulled roasted chicken, onion, feta, mint and cilantro. Garnish with roasted red pepper tapenade, and enjoy. The flavors will keep you coming back for more.
