TAMARIND MARGARITA

 

With Cinco De Mayo just a day away, I'm gearing up with this great Tamarind Margarita. Sipping on this is the best way to celebrate, alongside some delicious guacamole. I love serving my Margaritas in these fun confetti rimmed glasses. Salute! 

INGREDIENTS
8 tablespoons tamarind paste
1 cup water
2 cups tequila
1 cup fresh lime juice
1 cup CointreauHoney, to taste
Zest of 2 oranges
Coarse sugar for rim

DIRECTIONS

Dissolve tamarind paste in 1 cup water in a saucepan over medium heat; strain liquid into a container and refrigerate until ready to use.

Mix tequila, lime juice and Cointreau together. Add honey and stir to dissolve.

In a bowl, mix together zest and sugar. Cut zested orange into wedges and use wedge to slightly wet the rim of serving glass. Dip rim into zest and sugar. Pour margarita over lots of ice and fill up glass to about 3/4 full. Top off with tamarind concentrate (do not stir) and serve.
