Labor Day Sneeky

The  Backstreeter is a house sneeky from my friend I call "preppy." These can go down a little too quickly. Quite delicious. Enjoy!!!

 

Firefly sweet tea vodka + soda + juice of 1/2 lemon + mint garnish or a slice of lemon. Even some frozen fruit 

Easy way to put out some snacks. Apricots,cashews,ricotta (i just put in a jar with some olive oil  And sprinkled on top with some smoked pimento and sesame seeds) tomatoes,toast (I cut the long way)and my homemade spinach pesto. 

Spinach pesto

2 cloves garlic

1 cup cashews

2 cups spinach

1/2 cup parmesan

1/4 cup olive oil or more

salt and pepper to taste

Put the garlic cloves in CUISINART and pulse until fine. Add the cashews pulse until crumbly. Then add the spinach, Parmesan and oil and pulse until your desired consistency.   

This pesto can be used in a pasta, on fish,on your sandwich, on top of ricotta or even an apricot.
