Lavender Shortbread Cookies

 Makes 3 dozen cookies

 Ingredients:

 1 1/2 cups butter

2/3 cups sugar

2 3/4 cups all purpose flour

1/4-teaspoon salt

2 tablespoons chopped lavender

Steps:

 1. Preheat oven to 350F.

2. Cream together the butter and sugar in the food processor until light and fluffy.

 3. Add the flour, salt and lavender until well blended.  Cover and refrigerate for 1 hour.

 4. On a lightly floured surface roll out the dough to 1/4 inch thickness. Using a cookie cutter cut out cookies and place on a sheet pan lined with silpat or parchment paper.  The scraps can be rolled out one more time to make additional cookies.

 5. Bake in the oven for 8 – 10 minutes until light golden.

Cool on a wire rack before serving.  Can be stored in an airtight container.

Sprinkle malton salt on top for a more savory flavor (optional)
