Any day can be valentines day. It's just thinking. Of your loved one or a friend or may be someone you don't know. I love Hershey kisses. I mean love. A sneeky and some Hershey kisses need I say more. I love this tray and the glasses because they can be used for many different things.

 

Frozen Gin Lemon Mojito Sneeky - East Coast Blizzard Edition

 

So apparently it's snowing out on the east coast - but it's still sunny and 77 here in LA, so I thought I'd do a bicostal post to bring some warmth to my people out east who are dreaming of a warmer life. Check out my recipe below for frozen gin mojitos - my favourite way to relive the summer when it's cold outside. First thing's first though - you need some awesome boots to get you to the store to buy the ingredients - so check out these by Hunter that I just love! Be sure to use good knives to cut the lemons and of course you need a good blender to make them in, and none is better than the Vitamix! Then you can serve them in these beautiful collins glasses with this delicious key lime cheesecake from Neiman Marcus.

Frozen Gin Mojito Sneeky

1 (6 ounce) can frozen lemonade concentrate 8 (1.5 fluid ounce) jiggers gin 1/2 cup fresh mint leaves plus more for garnish 1 tray ice cubes 1 Lemon for garnish

Put the lemonade, gin, ice cubes, and mint into your blender and blend until they are the perfect consistency. This is what I love most about the Vitamx, by the way - you can just set it to the desired consistency and before you know it, you're off to the beach with your frozen Sneeky!

Display veggies in vases and glasses you have around the house for a chicer adaptation of the classic veggie tray

Use kraft paper (you can find at hardware store in large rolls), white painters tape and number stickers to pull off this easy look!

Take ordinary cans and turn them into football servers using paint and craft paper!

Burger Potato Bites

Ingredients

  • 16 large frozen French-fried waffle-cut potatoes (1/3 of a 22-oz. pkg.)
  • 1 pound ground beef or turkey
  • 2 teaspoons grilling seasoning blend
  • 4 slices cheddar cheese, cut into quarters (4 oz.)
  • 4 cherry tomatoes, sliced
  • Mustard, ketchup, dairy sour cream, and/or dill pickle slices

Directions

  1. Preheat oven to 400 degrees F. Line a baking sheet with foil. Evenly space potatoes on baking sheet.
  2. Bake potatoes for 18 to 20 minutes or until crisp and lightly browned. Remove from oven. Adjust oven racks and preheat broiler.
  3. Meanwhile, in a medium bowl combine meat and seasoning. Form into sixteen 1-ounce mini burgers (about 2 tablespoons).
  4. In a 12-inch skillet cook burgers, uncovered, over medium-high heat for 5 minutes or until temperature registers 160 degrees F on an instant-read thermometer, turning burgers once halfway through cooking. Drain fat.
  5. Top each potato with a burger, cheese quarter, and tomato slice. Broil 4 to 5 inches from heat for 1 to 2 minutes or until cheese is melted and tomato begins to brown.

Serve with mustard, ketchup, sour cream, and/or pickles. Makes 16 snacks.

Any Juice Margaritas

  • 2 oz. Tequila

  • 2 oz. Clementine juice (You can also use orange,grapefruit, lychee or anything you may have on hand.. Whatever is in season) 
  • 
1 Freshly squeezed lime

  • 1/2 oz. Cointreau or Patron Citronage

Shake, shake, shake! Pour over ice.Adorn with mint, clementine slice or slice of cucumber. Mint and Rosemary are always a fun garnbish too.

National Maple Syrup Day

Caramelized Bacon

  • 2/3 cup grade A or B maple syrup (not the fake stuff)
  • 2 teaspoons Dijon mustard
  • 1/4 cup firmly packed brown sugar
  • 2 pounds beef or turkey bacon

Preheat the oven to 325oF. In a small heavy saucepan mix together the syrup, mustard, and sugar and heat slowly on low heat, stirring often. Cook until syrup thickens, about 10 minutes. Set aside. Fry bacon in a large pan on medium-high heat using a “bacon weight” to keep the bacon really flat as it cooks. When the bacon is cooked to your liking, drain the bacon on a paper towel. Lay the flattened bacon on a jelly roll pan and brush the glaze on both sides. Bake for 10 to 12 minutes.

A scrumptious holiday sneeky in honor of one great lady 10 people

  • 4 cups vodka
  • 1/2 cup patron citronage
  • 1 1/2 cups cranberry juice
  • 1/2 cup freshly squeezed lime juice
  • 1 1/2 cups frozen limeade (1- 12 oz can limeade)
  • 1 cup mint leaves (smack and chop) to get the flavor
  • 5 egg whites

You can either put all in a blender or a big container with a lid and shake ,shake,shake for 3 minutes I prefer this "sneeky" Over ice I like to put cotton candy on top because it is fun!!!!! It puts a smile on people's faces. A slice of a clementine would be good or even froze sliced strawberries thrown in. note: You need to puts ice to the top then fill it ¾ with the peggy so the cotton candy only touches the ice and not the drink. Then it will eventually melt in.

Caramel Chocolate Brownies

CARAMEL CHOCOLATE BROWNIES

  • 1 ½ cup flour
  • 1 ½ cup oatmeal, regular old fashioned oats
  • 1 ½ cup light brown sugar, packed
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ½ sticks butter (6 oz) – cut into pieces – chilled
  • 12 oz chocolate chips
  • ½ cup heavy cream
  • 14 oz bag of caramels, unwrapped

 

Preheat oven to 350 F.

Combine flour, oatmeal, brown sugar, baking soda and salt in Food Processor. Add butter and process about 10 seconds. Remove 2 cups from bowl and reserve for topping. Press remaining mixture into 9x13 pan. Sprinkle chocolate chips over the top. Bring cream to simmer in a heavy saucepan. Add caramels and stir until smooth. Pour over chips. Sprinkle with remaining crumbs.

Bake 15 minutes until golden brown.

Thanksgiving Cranberry Sauce

St. Francis’ Cranberry Sauce

 

Makes approximately 3 cups

 

  • 3 Cups cranberries
  • 1 1/2 Cups of St. Francis Old Vine Zinfandel
  • 2 Pears
  • 2 Oranges
  • 2 Apples
  • 1 12 oz. can of limeade
  • 1 Cup of apricot jam
  • 2 teaspoons of fresh ginger
  • 2 teaspoons of cinnamon

 

Chunk up the pears, peeled oranges and apples. Add the wine and limeade to medium saucepan and bring to a boil. Add the cranberries and the chunked up fruit along with the fresh ginger and cinnamon. Stir continually for 5 minutes and then reduce heat to a simmer. Continue stirring until the sauce is thickened to your liking. Turn off heat. Fold in apricot jam and let cool.

 

Tips:

Great to store in a canning jar.

 

Option:

Use marmalade if you do not have apricot jam.

 

Scented Sugars

Scented sugar adds a subtle perfume and flavor to coffee, fruit desserts, and baked goods. Layer granulated sugar with aromatic edibles like scented geranium leaves, rose petals, orange and lemon peel (first set out for a day to dry), or vanilla beans. Mix small batches, and let them sit for a few days in tightly sealed jars while the scents infuse the sugar. One jar or a trio serves makes an unusual present for whomever you think could use a little sweetness!
