Tuna Tartare on Wonton Crisps
/I love that these are light and delicious!
Yields: 2 cups
1 lb. sushi-grade tuna
¼ cup extra virgin olive oil
1 tablespoon truffle oil
1 tablespoon finely minced shallots
2 teaspoons lemon zest
juice of 1 lemon
chives, finely chopped for garnish
salt & pepper to taste
Wonton Crisps (recipe follows)
Chop tuna into small dice. Carefully mix in the oils, shallots, lemon zest, lemon juice,salt & pepper. Place a small amount onto each wonton crisp. Garnish with chives and serve.
Wonton Crisps
1 package store-bought wonton skins
vegetable oil for frying
Cut each wonton into four squares. Fry in vegetable oil and drain on paper towels.
